WHAT IS RAICES? The third edition of the International Gastronomic Fair Raices, seeking to promote the traditional flavors of our country, will be held this year from 21 to 25 July. In this fair will involve 37 huecas of Guayaquil and 8 huecas invited from other provinces to delight the palates of the people from Guayaquil. In Raices will be held various activities aimed at improving the quality and service of the huecas from Guayaquil, which are great attractions for the tourist industry, as the program by which several huecas obtained a plan for improvement and training with the support of private companies. In addition, as part of the contest of traditional huecas, the staff of different culinary schools of the city will visit the huecas and will carry out an assessment to finally present its recommendations to improve infrastructure, quality and presentation.     Cocoa is the star product of this fair with the aim of positioning to Guayaquil as the World Capital of the cocoa. Lourdes Delgado, an expert on cocoa, will make a presentation on the importance of introducing the cocoa in local cuisine as an element of our identity and culture. Gisella Caicedo will perform a demonstration of the preparation of ancestral recipes with cocoa.
